Horseradish

INGREDIENTS

1 large Horseradish root

1 cup white vinegar

1 cup water

1 teaspoon sea salt

Clean the Horseradish root by peeling it with a peeler or sharp knife.  Then chop it into small chunks and place into blender.  Add equal parts white vinegar and water, (up to one cup each depending on the size of the root you're using and the texture of Horseradish you desire), add salt, blend until creamy and smooth.  Refrigerate or freeze.  

A variation of this recipe can be made using the Slovak tradition of adding Red Beets to yield a product that is red in color.  Just add a small can of sliced and peeled Red Beets to your ingredients, (or cokk up a few fresh ones on your own), place in the blender and mix until smooth and creamy.  

Either way...watch out...this is the real thing and it will provide all of the zest you can handle!  (Tested and enjoyed by WEEU Staff Members!)
