Minnie's Apple Roly-Poly INGREDIENTS One
and 3/4 cup floor 1/4 cup
sugar Four teaspoons
baking powder 1/2
teaspoon salt 1/2 cup
butter or margarine 2/3
cup sour cream FILLING 1/4
cup butter or margarine (softened) One
cup packed brown sugar Two
teaspoons ground cinnamon Six
medium apples, peeled, cored and thinly-sliced (about five
cups - recipe calls for Granny Smith apples) TOPPING Two
and 1/2 cups water Two
tablespoons brown sugar One
teaspoon ground cinnamon 1/2
cup half n' half cream
Combine the following in a mixing bowl: flour, sugar,
baking powder and salt. Cut in butter until
crumbly. Add sour cream and blend until ball
forms. Roll out on a floured surface into a 15" x
10" rectangle. Spread with softened butter and then
spread with remaining filling ingredients. Roll up,
jelly-roll style, starting with the long side. Cut into
12 slices and place slices (cut side down) on a 13" x
9" x 2" baking pan. For topping, combine the
water, brown sugar and cinnamon in a saucepan. Bring to
a boil and remove from heat. Stir in cream and then,
carefully, pour hot topping over the dumplings. Bake
uncovered at 320F degrees for 35 minutes or until
bubbly! (The center will jiggle when dumplings are hot
out of the oven but will set as dumplings stand for a few
minutes and cool.) Serve warm. Yields 12
servings. Enjoy!
